The source decides how rows are paged through its pagination capability. The grid adapts its requests and its UI to it.

Page size

pageSize on useGrid or createGrid sets the limit of every request. The default is 100.
source.ts
A change to the filter, sort, group or footer reloads the grid at the first page.

Your own pager

The default Pager hides itself unless the source uses offsets. Pass toolbar={false} or replace the toolbar to render your own.
pager.tsx
When the view is grouped, a page holds groups rather than rows, and the default pager counts groups.

Sources

Cursors from these sources are opaque and encode an offset.

Exporting every page

grid.fetchAll(max?) walks every page of the current view and returns the rows, up to 100,000 by default. CSV export uses it. See CSV import and export.
Work the grid does locally, such as a filter the source cannot run, only sees the rows on the loaded page.
